Ginger and Orange Chicken Kebabs

Ingredients

For the marinade

  • 260 g diced chicken breast
  • 1 orange, zested and juiced
  • 1 tsp lime juice
  • ½ red chilli, deseeded and finely diced
  • 2 garlic cloves, peeled and crushed
  • 2 cm ginger, peeled and finely grated
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • ½ tbsp rice vinegar
  • ½ tsp onion granules
  • ¼ tsp sriracha sauce
  • 1 spring onion, finely diced

For the kebabs

  • 2 peppers, deseeded and chopped into chunks
  • 24 cherry tomatoes
  • low-calorie cooking spray

Instructions

  1. In a bowl, add the marinade ingredients and stir to combine. Add the diced chicken and stir to coat. Cover and pop into the fridge overnight.

  2. Preheat the oven to 180ºC, spray a baking tray with low-calorie cooking spray and soak the bamboo skewers in water.

  3. Once the chicken has marinated, thread the chicken, peppers and tomatoes onto 8 skewers in any order you like.

  4. Place the 8 skewers onto the baking tray and cook for 20-30 minutes until the chicken is cooked through. Serve 2 chicken kebabs per portion, with your choice of accompaniment.
