Place the carrots, honey, orange juice and thyme leaves in a medium saucepan. Stir to combine, cover completely with a tight-fitting lid and place over a medium heat.
Bring to a simmer. Reduce the heat to low and simmer gently for 15-20 minutes, stirring occasionally until the carrots are soft and tender.
Season to taste with salt and freshly ground black pepper. Serve the carrots and the juices with a main dish of your choice.
