Carrots with Honey and Orange

Ingredients

  • 4 medium carrots (approx. 400g) peeled and cut into 1cm wide sticks
  • 1 tbsp clear honey
  • 5 tbsp fresh orange juice
  • 2 tsp fresh thyme leaves stalks removed and finely chopped
  • salt and freshly ground black pepper to taste

Instructions

  1. Place the carrots, honey, orange juice and thyme leaves in a medium saucepan. Stir to combine, cover completely with a tight-fitting lid and place over a medium heat.

  2. Bring to a simmer. Reduce the heat to low and simmer gently for 15-20 minutes, stirring occasionally until the carrots are soft and tender.

  3. Season to taste with salt and freshly ground black pepper. Serve the carrots and the juices with a main dish of your choice.
