Sticky Chicken Nuggets

Ingredients

  • 320 g chicken breast, cut into bite-size chunks
  • 80 g panko breadcrumbs
  • 1 medium egg, beaten
  • 3 tbsp tomato ketchup
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • ½ tsp Henderson's relish
  • ¼ tsp paprika
  • ¼ tsp garlic granules
  • low-calorie cooking spray

Instructions

  1. Preheat your oven to 180°C and line a baking tray with non-stick baking paper.

  2. Add the breadcrumbs and egg to two plates. Dip a piece of chicken first into the egg and then the breadcrumbs, completely coating all sides.

  3. Repeat with the rest of the chicken, place onto the baking tray and spray lightly with low-calorie cooking spray.

  4. Cook for 30 minutes, turning the nuggets halfway through. After half an hour the nuggets should be crispy and golden. To test that the chicken is cooked, cut a piece in half, checking that the juices run clear and there is no pink remaining.

  5. While the nuggets are cooking, add the ketchup, honey, soy sauce, Henderson's relish, paprika and garlic granules to a small bowl and stir to combine.

  6. Pour the sauce over the nuggets on the baking tray and toss to coat. Cook for a further 5 minutes.

  7. Remove the chicken nuggets from the oven and serve with an accompaniment of your choice!
