Breakfast Loaded Fries

Ingredients

  • 2 large potatoes approx. 450g peeled
  • 4 chicken chipolata sausages
  • 2 unsmoked bacon medallions cut into chunky slices
  • 2 large mushrooms sliced
  • 8 cherry tomatoes halved
  • 2 medium eggs
  • ½ tsp dried sage
  • salt and pepper to taste
  • low-calorie cooking spray

Instructions

  1. Preheat the oven to 190°C.

  2. Slice the potatoes into 1cm thick chips. Place the chips onto a baking tray, along with the sausages, and spray with low-calorie cooking spray. Cook for 25 minutes.

  3. The chips should be just starting to colour around the edges. Add the mushrooms, tomatoes, bacon and sage, and spray again with low-calorie cooking spray. Cook for a further 20-25 minutes, until the chips are golden brown and the sausages have cooked through.

  4. When the chips are nearly cooked, spray a frying pan with low-calorie cooking spray and set on a medium heat. Fry the eggs and serve with your breakfast fries!
