Preheat the oven to 190°C.
Slice the potatoes into 1cm thick chips. Place the chips onto a baking tray, along with the sausages, and spray with low-calorie cooking spray. Cook for 25 minutes.
The chips should be just starting to colour around the edges. Add the mushrooms, tomatoes, bacon and sage, and spray again with low-calorie cooking spray. Cook for a further 20-25 minutes, until the chips are golden brown and the sausages have cooked through.
When the chips are nearly cooked, spray a frying pan with low-calorie cooking spray and set on a medium heat. Fry the eggs and serve with your breakfast fries!
