Ingredients

  • 4 Quorn Bratwurst feel free to substitute!
  • 200 g carrots
  • 150 g onion
  • 2 cans tinned tomatoes
  • 2 stock cubes chicken or vegetable
  • 4 cloves garlic
  • 4 tbsp curry powder
  • 1 tbsp garlic granules
  • 2 tbsp tomato puree
  • 1 tbsp garam masala
  • 1 tbsp onion granules
  • 4 tbsp balsamic vinegar
  • 2 tbsp Worcestershire sauce or Hendersons Relish to keep it vegetarian
  • 2 tsp sweetener
  • 400 ml water
  • low calorie cooking spray

Instructions

  1. Add chopped onion, minced garlic, dry stock cubes, curry powder, balsamic vinegar, onion granules, garlic granules and garam masala to a large sauce pan with some low calorie cooking spray and soften over a medium heat.
  2. Add chopped carrots, tinned tomatoes and water to the pan and bring to the boil. 
  3. Turn down the heat so the mix is simmering and put the lid on the plan. Let it simmer for 40 minutes.
  4. When the sauce is cooked, add the tomato puree, Worcestershire sauce and sweetener into the pan. Then take a stick blender and whizz up the ingredients. You are aiming for a smooth consistency. Add salt and pepper to taste. If you would like the sauce thicker, reduce over a low heat. If you want it thinner, add a little water until it is how you like it.

  5. Spritz a frying pan with low calorie cooking spray and cook the sausages. Once they are done, plate them up and pour over the sauce. You can also sprinkle over a little extra curry powder before serving!
