Chicken Teriyaki Kebabs

Ingredients

  • 600 g skinless and boneless chicken thigh fillets cut into chunks
  • 2 tbsp dark soy sauce
  • 1 tbsp white wine vinegar
  • 2 tbsp tomato puree
  • 2 tbsp granulated sweetener
  • ½ tsp dried chilli flakes
  • 1 tbsp fish sauce
  • 2 cloves garlic peeled and finely grated
  • 1 tbsp fresh ginger finely grated
  • 1 lime juice and zest
  • low calorie cooking spray

Instructions

  1. Place all the ingredients into a bowl and mix well.

  2. Cover and chill in the fridge for an hour.

  3. Once marinated, thread the meat onto a skewer, spray with low calorie cooking spray and place onto a hot barbecue for 35 minutes until thoroughly cooked through.

    If cooking in an oven, preheat the oven to 180ºC and cook for 35 - 40 minutes until cooked through.

  4. Serve with savoury rice, or your choice of accompaniment!
