Bring a pan of salted water to the boil.
Place the chopped potato in the pan and cook for 15 to 20 minutes or until they are tender.
While the potatoes are cooking finely chop the chives or spring onion.
Drain the cooked potato, then return to the pan. Add some salt and pepper.
Mash the potato, using a hand blender with a mashing attachment or a potato masher.
When all the lumps have gone and the potato is a nice smooth texture stir in the chives/spring onion. Check the seasoning and add a little more if necessary. Stir well and serve.
