Tikka Turkey Burgers

Ingredients

For the burgers

  • 400 g turkey mince
  • 3 tbsp tikka spice mix see BBQ chicken steaks
  • 1 tsp sea salt
  • 1/2 lemon juice only
  • 1 handful fresh parsley finely chopped
  • 1 small egg if your mince is dry - if not see what it's like after you've mixed the burger ingredients
  • 1 dash Worcestershire sauce
  • freshly ground black pepper
  • low calorie cooking spray
  • 4 small handfuls rocket
  • 2 large tomatoes sliced
  • 4 60g wholemeal rolls

For the raita

  • 1/4 cucumber deseeded and finely chopped
  • 6 tbsp fat free natural Greek yogurt
  • 1 handful fresh mint finely chopped
  • 1 pinch salt

For the tikka seasoning mix

  • 3 tsp Paprika
  • 2 tsp Ground Coriander
  • 2 tsp Ground Cumin
  • 2 tsp Garam Masala
  • 1.5 tsp Turmeric
  • 1 tsp Ground Ginger
  • 1 tsp Garlic Powder
  • 1 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper

Instructions

To make the tikka seasoning mix

  1. First, make the tikka seasoning (if you don't have any made up already.)

  2. Mix all the ingredients together well.
  3. Store in an airtight jar until ready to use.

To make the burgers

  1. In a large bowl mix the turkey mince with all the other burger ingredients (not the low calorie cooking spray, rocket, tomatoes and rolls).

  2. Divide the mixture into 4 equal portions and form them into burger shapes. You can use a burger press for this.
  3. Put the burgers on a plate, cover and refrigerate for a short time so they firm up slightly.
  4. Meanwhile, make the raita - see below.

  5. When you've made the raita, turn on the OptiGrill and select the burger setting, then press OK.

  6. Allow the OptiGrill to preheat. When it's ready the indicator light will stop flashing and you will hear a beep.
  7. Spray the burgers on both sides with Low calorie cooking spray, then cook them on the Optigrill until the indicator light turns red.
  8. While the burgers are cooking, slice the buns in half and arrange the rocket on the bottom followed by the sliced tomato.
  9. Remove the cooked burgers, place them on the rocket and tomatoes, then spoon some of the raita on top of the burgers. Place the top of the roll on the burger and serve.

To make the raita

  1. Cut the piece of cucumber in half lengthways, scoop out the seeds and finely chop the flesh. Place it in a bowl.
  2. Finely chop the fresh mint leaves and add to the bowl with the cucumber.
  3. Stir in the yogurt and season to taste with the salt. Set the raita aside in the refrigerator.
