Mini Pumpkin Pies

Ingredients

  • 1 sheet filo pastry
  • 150 grams cooked pumpkin or butternut squash
  • 50 mls unsweetened almond milk
  • 2 tbsp granulated sweetener
  • 2 eggs
  • ½ tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp nutmeg ground or finely grated
  • low calorie cooking spray

Instructions

  1. Pre heat the oven to 160 degrees
  2. Spray a mini muffin tin with low calorie cooking spray. Cut the sheet of filo pastry into 32 squares and use 16 to line the mini muffin tin. Spray again with low calorie cooking spray and put a second piece of filo into each of the 16 cases
  3. Bake for 5 minutes
  4. Meanwhile, in a food processor place the pumpkin, almond milk, granulated sweetener, eggs and spices and mix until smooth
  5. Take the filo cases out of the oven and fill with the pumpkin mixture
  6. Bake for 10 minutes
  7. Serve warm or cold, with an optional dusting of icing sugar
