Mini Beef and Horseradish Yorkshire Puddings

Ingredients

  • 30 g plain flour
  • 2 eggs
  • 75 ml skimmed milk
  • sea salt
  • freshly ground black pepper
  • 5 tbsp quark
  • ½ tbsp horseradish sauce
  • 1 - 2 slices roast beef cut into 16 thin strips
  • low calorie cooking spray

Instructions

  1. Pre-heat oven to 210°C
  2. Put flour, eggs, milk and salt in a decent sized bowl and whisk, by hand, until the mixture is smooth
  3. Spray 16 holes in a mini muffin tray with a decent amount of Low calorie cooking spray and place in the oven until it starts foaming slightly (5-8 minutes)
  4. Divide the batter evenly between the 16 moulds and place in the oven
  5. Cook for 8 - 10 minutes, or until they are crisp, golden and hold their shape
  6. While you're waiting for the Yorkshire puds to cook, mix the horseradish and quark together

  7. Place it in a piping bag fitted with a small star shaped nozzle
  8. When the Yorkshires are cooked removed from the oven and allow to cool slightly
  9. Pipe the horseradish mix into the hollow of each Yorkshire
  10. Roll up each strip of beef and press them into the top of the Yorkshires puddings
