Smoked Salmon Mousse

Ingredients

  • 100 g smoked salmon trimmings
  • ¼ small red onion
  • 1 sprigs fresh parsley
  • 125 g quark
  • 55 g lightest cream cheese
  • 1 or 2 pickled gherkins
  • ¼ tsp Tabasco sauce
  • 1 lemon Juice of
  • fresh chives to garnish with

Instructions

  1. Place onion and parsley into your food processor and pulse a couple of seconds until roughly chopped. scrape down the side of the bowl with a spatula
  2. Add in quark, cream cheese, lemon juice and Tobasco and whizz up on medium for 20 seconds. scrape down the side of the bowl with a spatula

  3. Add the gherkin and smoked salmon and whizz on medium for 30 seconds until a smooth mousse-like consistency is achieved. For a coarser texture, pulse 3-4 times, until desired consistency
  4. Use immediately or for best results chis in the fridge for 30 minutes. Garnish with chopped chives or spring onion before serving
