Turn your Instant Pot onto 'Sauté', spray some low calorie cooking spray into it and add the beef.
Sauté until the meat is no longer pink, then toss in all the veg. Don't worry if the steak browns on the bottom, just keep stirring.
Add in the beef stock, spices and seasoning.
When it starts to bubble press cancel and place the lid on your Instant Pot. Set the valve to sealing. Cook on pressure cook for 35 minutes.
Once cooking is complete, your Instant Pot should automatically switch over to warm. Leave the steam valve on natural release for 20 minutes.
Turn the valve to venting and once pressure has released open the lid. If the stew isn't thick enough then you can add some instant mash. We don't find it needs thickening, but it is an option!
Add more salt if needed and keep warm until you're ready to serve.
