Vegetarian Sweet and Sour

Ingredients

  • 2 onions
  • 2 peppers
  • 1 small tin sweetcorn
  • 1 tin chopped tomatoes
  • 500 ml vegetable stock
  • 6 tbsp granulated sweetener
  • 4 tbsp white wine vinegar
  • 1 dash Worcestershire sauce
  • 1 dash dark soy sauce
  • 400 g vegetarian chicken pieces like Quorn
  • half a pineapple optional
  • low calorie cooking spray

Instructions

  1. Start by chopping the onions and peppers. Add to a frying pan sprayed with low calorie cooking spray, along with the vegetarian chicken pieces (or whatever you're using) and sweetcorn. Fry until it looks...fried!

  2. Meanwhile, prepare the stock by adding to it the pineapple (optional), vinegar, sauces, granulated sweetener and tinned tomatoes. Mix it up and add to the frying pan.

  3. Let the mixture boil down for a good 20 minutes or so, this will give it chance to thicken up a little and taste even better.
  4. That's about it! Best served with rice, or just as good on it's own. Enjoy!
