Sprout Tops with Bacon and Onion

Ingredients

  • 1.5 kg sprout tops stalks trimmed, washed and large leaves halved
  • 3 medium red onion peeled, halved and sliced thinly
  • 250 g bacon medallions cut into pieces
  • low calorie cooking spray
  • salt and freshly ground pepper to taste

Instructions

  1. Gently cook the onion and bacon in the low calorie cooking spray for 4-5 minutes, stirring every so often, until soft, then remove from the heat.

  2. Cook the sprout tops in boiling salted water for 4-5 minutes until tender, then drain in a colander. Gently squeeze out any excess water.
  3. Toss the sprout tops with the onions and bacon and season to taste.
