Sticky Sesame Chicken Drumsticks

Ingredients

  • 12 medium chicken drumsticks skinned
  • 2 tbsp clear honey
  • 2 tbsp dark soy sauce
  • 2 tbsp balsamic vinegar
  • 1 tbsp tomato puree
  • 1 clove garlic crushed
  • 3cm piece root ginger peeled and finely grated
  • 5 spring onions chopped
  • 1 tsp sesame seeds toasted

Instructions

  1. Preheat oven to 190º.

  2. In a small bowl mix together the honey, soy sauce, balsamic vinegar, tomato puree, garlic, ginger and 4 of the spring onions, reserving one chopped spring onion for garnish.

  3. Using a small sharp knife, cut 3 diagonal slits into each drumstick and place in a shallow ovenproof dish.

  4. Pour the marinade over and place into a preheated oven, uncovered, for 35-45 minutes, turning once halfway through. Cook until the marinade has reduced and the chicken is thoroughly cooked through.

  5. Sprinkle the remaining spring onion and sesame seeds over the drumsticks and serve.
