Pre-heat the oven to 180ºC.
Trim the carrots (no need to peel) and scatter over a baking sheet.
Spray with low calorie cooking spray and place in the oven for 25-30 minutes, until the carrots are soft.
Mix the maple syrup, lemon zest and cranberries together in a small bowl.
Once the carrots are soft, remove from the oven and pour over the syrup. Toss the carrots around until well coated.
Season with salt and pepper and return to the oven for 5 minutes, no longer, as the cranberries may catch and turn bitter.
Serve!
