Pizza Waffles

Ingredients

For the waffles

  • 150 g self raising flour
  • 1 medium egg beaten
  • 200 ml skimmed milk
  • low calorie cooking spray

For the filling

  • 200 g passata
  • 1 garlic clove crushed
  • 5 leaves fresh basil finely chopped
  • 30 g reduced fat mozzarella finely chopped
  • 20 g reduced fat Cheddar cheese finely grated
  • 6 slices pepperoni sliced into strips

For the spicy ketchup dip

  • 5 tbsp tomato ketchup
  • 1/4 tsp Sriracha

Instructions

  1. Pre-heat the oven to 180ºC and pre-heat your waffle maker.

  2. In a small saucepan add the passata, garlic clove and fresh basil. Heat at a simmer for 5 minutes then leave to one side to cool.

  3. In a mixing bowl combine the flour, milk and egg and whisk into a smooth batter.

  4. Once your waffle maker is hot spray it with a little low calorie cooking spray.

  5. Pour a little of the waffle batter onto the hot plate and spread until it is just covered.

  6. Spoon some of the cooled pizza sauce onto the waffle batter then layer with the sliced pepperoni, mozzarella and Cheddar cheese, and top with more of the batter.

  7. Seal your waffle maker and cook for 5-6 minutes or until the waffle is crispy and golden brown around the edges.

  8. Place the waffles into the preheated oven whilst you cook the other 5 waffles.

  9. Once you have made all of your waffles take them out of the oven and cut into finger shapes.

  10. In a small bowl mix the ketchup with the Sriracha sauce and serve with the waffles for dipping.
