1 Serving

Ingredients

  • 1 low fat sausage
  • 1 small potato peeled
  • ¼ small onion peeled and finely diced
  • 1 low calorie soft tortilla wrap
  • 2 tbsp 50% less sugar and salt tomato ketchup
  • 20 g reduced fat Cheddar cheese finely grated
  • 2 cherry tomatoes halved
  • 1 medium egg
  • low calorie cooking spray
  • salt and pepper to taste

Instructions

  1. Pre-heat the oven to 180ºC.

  2. Spray a small ovenproof dish with low calorie cooking spray and place the sausage in the dish. Place in the preheated oven for 10 minutes, turning the sausage halfway through. Remove from the oven and slice the sausage into 8 slices.

  3. While the sausage is cooking, prepare the chips. Cut the potato into 8 x 1 cm wide chips. Place a small saucepan of water on the hob, cover and bring to the boil.

  4. When the water is boiling, carefully add the chips, cover and par boil for 6 - 7 minutes until just tender. Drain off the water and place the par boiled chips on absorbent kitchen paper.

  5. Pat the par boiled chips dry then place on a small plate. Spray the dry chips with low calorie cooking spray and season well with salt and pepper.

  6. Line the baking tray with non stick baking paper. Place the tortilla wrap on the paper.

  7. Spread the tomato ketchup over the tortilla wrap up to 1cm from the edge.

  8. Spread the onion over the ketchup. Then add the Cheddar cheese, cherry tomatoes, sausage slices and chips, leaving a space in the centre for the egg.

  9. Crack the egg open and carefully drop into the space in the middle of the pizza.

  10. Spray the edge of the pizza base with low calorie cooking spray and place in the oven for 15 - 20 minutes, turning the baking tray halfway through cooking.

  11. The egg should be set and cooked and the chips lightly golden. Serve at once.
