Buttery Carrot and Swede Mash

Ingredients

  • 400 g carrots, peeled and cut into chunks
  • 400 g swede, peeled and cut into chunks
  • 1 tbsp reduced-fat spread
  • salt and freshly ground black pepper, to taste

Instructions

  1. Put the carrot and swede into a large saucepan of salted water. Bring the pan to the boil, then cover and simmer for about 30 minutes — until soft.

  2. Using a colander, drain the veg, then return to the pan. Add the spread, and season to taste with salt and pepper.

  3. Mash well, until the carrot and swede mixture reaches your preferred consistency (we like it quite smooth).
