Beat the eggs in a bowl. Mix in the cinnamon and granulated sweetener, until the sweetener has dissolved and cinnamon combined.
Spray a large frying pan with low-calorie cooking spray and set on a low heat.
Place a slice of bread into the egg mixture. Flip it over, then press down gently to fully coat the bread.
Place in the pan and fry for 2 minutes. Flip over and cook for a further 2 minutes.
Repeat for the other slices of bread. Then serve warm with your choice of fruit, yoghurt, and syrup!
