Preheat the oven to 200ºC. Pierce the potatoes, and cook for 5 minutes each in the microwave — until soft.
Scoop out the centres of the potatoes into a bowl, then mash until smooth. Reserve the potato shells for later.
Add the cottage cheese and spring onion to the bowl of potato and mix. Season with salt and pepper, to taste.
Spray the potato shells with low-calorie cooking spray and place onto a baking tray.
Spoon the mashed potato filling back into the potato shells. Then sprinkle over the cheese and bake for 30 minutes. Once your potatoes skins are golden and bubbling, serve!
