Air Fryer Loaded Potato Skins

Ingredients

  • 4 large potatoes (approx. 1kg)
  • 100 g reduced-fat cottage cheese
  • 2 spring onions, finely sliced
  • salt and freshly ground black pepper, to taste
  • low-calorie cooking spray
  • 20 g reduced-fat Cheddar cheese (finely grated)

Instructions

  1. Pierce the potatoes, and cook for 5 minutes each in the microwave — until soft.

  2. Scoop out the centres of the potatoes into a bowl, then mash until smooth. Reserve the potato shells for later.

  3. Add the cottage cheese and spring onion to the bowl of potato and mix. Season with salt and pepper, to taste.

  4. Spray the potato shells with low-calorie cooking spray and place into the air fryer.

  5. Spoon the mashed potato filling back into the potato shells. Sprinkle over the cheese and air-fry for 20-30 minutes at 180ºC, until golden brown. Once your potatoes skins are melty and bubbling, serve!
