Beef and Feta Burgers

Ingredients

For the burgers

  • 250g 5% fat beef mince
  • 1 small red onion, peeled and finely diced
  • 2 cloves of garlic, peeled and crushed
  • 10 g pitted green or black olives, finely diced
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1 tsp dried mint
  • 1 tsp paprika
  • 1 medium egg, beaten
  • salt and black pepper, to taste
  • low calorie cooking spray

To serve

  • 6 wholemeal bread rolls
  • 40 g reduced fat feta cheese
  • 3 tbsp fat free Greek yoghurt
  • 2 tsp mint sauce
  • 1 tomato sliced
  • 80 g rocket leaves

Instructions

  1. In a mixing bowl, combine the beef mince, onion, garlic and olives and stir until fully combined. Add the herbs, paprika, beaten egg, salt and black pepper and mix until well combined.

  2. Form the beef mixture into 6 equal sized burger patties and place on a plate.

  3. Spray a frying pan with low calorie cooking spray and set on a medium heat.

  4. When the frying pan is hot, add the burger patties and cook on each side for 5 minutes until cooked through.

  5. While the burgers are cooking, add the feta cheese, Greek yoghurt and mint sauce to a small bowl and stir until smooth. Slice the wholemeal rolls in half and lightly toast under the grill.

  6. Once the burgers are cooked, spread a little of the mint, yoghurt and cheese mixture onto the top and bottom of each roll and add a burger, sliced tomato and rocket leaves. Place the top on the burgers. Serve with your choice of accompaniment.
