Preheat the oven to 200ºC and spray a baking tray with low calorie cooking spray.
Using a sharp knife, make cuts across each chicken breast, slicing almost to the bottom but not through it. Season with salt and pepper and sprinkle over the garlic granules.
Place the chicken breasts onto the baking tray. Fill each cut with sliced tomato, mozzarella and the sliced basil. It doesn't matter what order you do this in, just make sure the ingredients are evenly split between the chicken.
Place the baking tray into the oven for 15 minutes. While the chicken is cooking, mix the balsamic vinegar and honey together in a small bowl.
Use a pastry brush to brush the balsamic mixture over each chicken breast and cook for another 10 minutes. Test that the chicken is cooked through and no pinkness remains. Serve with your choice of accompaniment.
