Pimms Lolly Ice

Ingredients

  • 50 ml Pimms
  • 400 ml light ginger ale
  • 50 g strawberries, sliced
  • 6 cucumber slices
  • 3 slices of orange, cut into thirds
  • 4 g fresh mint, finely sliced

Instructions

  1. Combine the ginger ale and Pimms in a large mixing jug.

  2. Add a little of the sliced mint to the bottom of each ice lolly mould, some sliced strawberry, cucumber and some of the orange.

  3. Pour in the Pimms and ginger ale, being careful not to fill all the way to the top. Finish with any extra mint.

  4. Add the lolly sticks and freeze overnight.
