In a bowl, add the marinade ingredients and stir to combine. Add the diced chicken and stir to coat. Cover and pop into the fridge overnight.
Preheat the oven to 180ºC, spray a baking tray with low-calorie cooking spray and soak the bamboo skewers in water.
Once the chicken has marinated, thread the chicken, peppers and tomatoes onto 8 skewers in any order you like.
Place the 8 skewers onto the baking tray and cook for 20-30 minutes until the chicken is cooked through. Serve 2 chicken kebabs per portion, with your choice of accompaniment.
