Air Fryer Ginger and Orange Chicken Kebabs

Ingredients

For the marinade

  • 260 g diced chicken breast
  • 1 orange, zested and juiced
  • 1 tsp lime juice
  • ½ red chilli, deseeded and finely diced
  • 2 garlic cloves, peeled and crushed
  • 2 cm ginger, peeled and finely grated
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • ½ tbsp rice vinegar
  • ½ tsp onion granules
  • ¼ tsp sriracha sauce
  • 1 spring onion, finely diced

For the kebabs

  • 2 peppers, deseeded and chopped into chunks
  • 24 cherry tomatoes
  • low-calorie cooking spray

Instructions

  1. In a bowl, add the marinade ingredients and stir to combine. Add the diced chicken and stir to coat. Cover and pop into the fridge overnight.

  2. Preheat the air fryer to 180ºC. Spray the air fryer basket with low-calorie cooking spray and soak the bamboo skewers in water.

  3. Once the chicken has marinated, thread the chicken, peppers and tomatoes onto 8 skewers in any order you like.

  4. Place the 8 skewers into the air fryer basket and cook for 10-15 minutes, until the chicken is cooked through. You may need to do this in batches depending on the size of your air fryer. Serve 2 chicken kebabs per portion with your choice of accompaniment.
