Parmesan Pork Skewers

Ingredients

  • 350 g diced pork, any visible fat removed
  • 30 g Parmesan cheese, finely grated
  • 1 tsp mixed herbs
  • 1 tsp Dijon mustard
  • 1 tsp red wine vinegar
  • ¼ tsp garlic granules
  • salt and pepper, to taste
  • low-calorie cooking spray

Instructions

  1. Preheat the oven to 190ºC and spray a baking tray with a little low-calorie cooking spray.

  2. In a bowl, combine the mixed herbs, Dijon mustard, red wine vinegar, garlic granules and a little salt and pepper. Add the pork to the bowl and toss to coat.

  3. Thread the diced pork onto 4 skewers and place onto the baking tray. Sprinkle over half the Parmesan and use the pork on the skewers to dab onto any of the excess Parmesan on the tray.

  4. Pop into the oven for 10 minutes. Remove from the oven and sprinkle over the remaining Parmesan cheese, again dabbing the skewers into any of the excess Parmesan on the tray. Cook for another 5 minutes.

  5. Remove from the oven and serve with your choice of accompaniment.
