Chicken and Vegetable Traybake

Ingredients

  • 6 boneless, skinless chicken thighs
  • 2 peppers, cut into chunky slices
  • 2 red onions, quartered
  • 10 cherry tomatoes, halved
  • 3 garlic cloves, crushed
  • ½ lemon, juiced
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • handful of fresh basil, chopped
  • 100 g green olives
  • 50 g reduced fat feta cheese
  • low-calorie cooking spray

Instructions

  1. Preheat the oven to 200ºC.

  2. Spray a large oven tray or oven dish with low-calorie cooking spray.

  3. Add the chicken thighs, peppers, onion, garlic and basil to the tray or dish and sprinkle over the smoked paprika and dried oregano. Stir to coat the vegetables and chicken in the herbs.

  4. Spray again with low-calorie cooking spray and pop in the oven for 40 minutes.

  5. Remove from the oven and add the cherry tomatoes and olives. Pour over the lemon juice and give the pan a stir.

  6. Return to the oven for another 15 minutes.

  7. Crumble over the feta cheese and serve with your choice of accompaniment.
