Vegetable Couscous

Ingredients

  • 110 g dried couscous
  • 1 small red onion peeled and diced
  • ½ red pepper deseeded and diced
  • 70 g broccoli chopped into small pieces
  • 2 garlic cloves peeled and crushed
  • 200 ml boiling water
  • ½ vegetable stock cube
  • 2 tbsp harissa paste
  • 1 tbsp tomato puree
  • 30 g reduced-fat feta cheese
  • 1 tbsp lime juice
  • 5 g mint leaves removed from stalks and finely chopped
  • salt and pepper to taste
  • low-calorie cooking spray

Instructions

  1. Spray a frying pan with low-calorie cooking spray and set on a medium heat.

  2. Add the onion and fry for 2 minutes. Add the garlic and peppers and continue to fry for 2 minutes. Add the broccoli and fry for 2 minutes, until starting to soften.

  3. To the boiling water, add the stock cube, harissa and tomato puree stir to combine.

  4. Remove the pan from the heat and add the couscous into the pan. Stir to mix evenly.

  5. Pour the stock mixture into the pan and stir quickly. Cover the pan with foil and leave to stand for 5 minutes.

  6. Stir through the mint, lime juice and season with salt and pepper. Crumble over the feta cheese and serve.
