Chicken Teriyaki Kebabs

Ingredients

  • 600 grams chicken thigh fillets
  • 2 tbsp dark soy sauce
  • 1 tbsp white wine vinegar
  • 2 tbsp tomato puree
  • 2 tbsp granulated sweetener
  • ½ tsp chilli flakes
  • 1 tbsp fish sauce
  • 2 cloves garlic finely grated
  • 1 tbsp fresh ginger finely grated
  • 1 lime juice and zest
  • low calorie cooking spray

Instructions

  1. Place all the ingredients into a bowl and mix well.
  2. Cut the chicken thighs into bite sized chunks and place into the marinade. Cover and chill in the fridge for an hour.
  3. Once marinaded, place the meat onto a skewer, spray with low calorie cooking spray and place onto a hot barbecue for 35 minutes until thoroughly cooked through.

    If cooking in an oven, preheat the oven to 180ºC and cook for 35 - 40 minutes until cooked through.

  4. Serve with savoury rice, or your choice of accompaniment!
