Salt and Pepper Chips

Ingredients

For the Chips

  • 3 large potatoes
  • 1-2 spring onions finely diced
  • ½ green pepper chopped
  • ½ red pepper chopped
  • 1-2 whole chillies deseeded and sliced
  • 2 tsp salt and pepper spice mix see below for the recipe
  • low calorie cooking spray

For the Spice Mix

  • 1 tbsp sea salt flakes
  • 1 tbsp granulated sweetener
  • ½ tbsp Chinese 5 spice
  • 1 good pinch chilli flakes
  • 1 tsp ground white pepper

Instructions

To Make the Salt and Pepper Mix

  1. Mix all of the spice mix ingredients together.

To Make the Chips - Oven Method

  1. Pre heat the oven to 200°C.

  2. Peel the potatoes and cut them into chunky chips.

  3. Place them in a pan of boiling salted water and simmer until they start to soften but are still quite firm.

  4. Drain the potatoes and spray a baking tray with low calorie cooking spray.

  5. Coat the potatoes in low calorie cooking spray and sprinkle them with a little salt and pepper mix.

  6. Place in the oven for 15-20 minutes until they are soft and starting to colour.

  7. Spray a frying pan with a generous amount of low calorie cooking spray, then add the chopped spring onions, peppers and chillies and cook for a few minutes until they start to soften.

  8. Add the potatoes to the pan and sprinkle with the salt and pepper spice mix (you can use as much or as little as you like). Keep stirring and tossing the ingredients so they do not catch and burn. You may need to add a bit more Low calorie cooking spray to the pan.

  9. Continue cooking until the chips are golden brown, then serve.

To Make the Chips - Air Fryer Method

  1. Peel the potatoes and cut them into chunky chips, pat them dry with some kitchen roll.

  2. Place the chips in a bowl, and spray them with a decent amount of Low calorie cooking spray.

  3. Sprinkle with the Salt and Pepper Spice Mix (you can use as much or as little as you like).

  4. Place them in the air fryer and cook for 20 minutes. Then add the chopped peppers, chillies and continue to cook for another 10 minutes.

  5. Add the chopped spring onion and cook for 5 minutes.

  6. Check that the chips are cooked and golden brown, and the chilli, peppers and spring onions are cooked (if not cook for a few more minutes) then serve.
