For the cakes

  • 50 grams Defatted Almond Flour such as Sukrin Almond Flour
  • 50 grams Mixed Dried Fruit
  • 5 Eggs
  • 1 tsp Baking Powder
  • 25 ml Sherry
  • 2 tbsp Black Treacle
  • 4 tbsp Granulated Sweetener
  • 2 tsp Mixed Spice
  • Low calorie cooking spray

For the Icing

  • 25 grams Icing Sugar
  • 2 tsp Water


  1. Preheat the oven to 160°C. In a small bowl add the sherry and mixed fruit.
  2. In a large mixing bowl add the almond flour, eggs, black treacle, sweetener, mixed spice and baking powder and mix well until fully incorporated.
  3. Once the mixed fruit has plumped up, add it, and the remaining sherry from the bowl into the cake mix. Stir well.
  4. Spray a silicone muffin tin with low calorie cooking spray and spoon in the cake mixture, making sure to evenly distribute the fruit. Bake for 25 minutes.

  5. Remove from the oven, take out from the silicone cake tin carefully and place on a wire rack to cool.
  6. Meanwhile, in a small bowl, mix the icing sugar and water to form an icing. Once the cakes are completely cool, drizzle with icing and serve!
