Halloumi Cous Cous Burgers with Salsa

Ingredients

For the burgers

  • 150 grams cous cous
  • 90 grams reduced fat halloumi
  • 2 tbsp chopped fresh mint
  • 130 ml vegetable stock
  • 2 eggs
  • 1 carrot
  • low calorie cooking spray

For the salsa

  • 2 large tomatoes
  • 1 small red onion
  • 1 red chilli
  • 2 tbsp chopped fresh coriander
  • 1 tsp apple cider vinegar or white wine vinegar
  • 1 tsp salt

Instructions

  1. Add the cous cous into a large bowl. Very finely grate the carrot and add to the cous cous. Pour over the boiling stock, stir, cover and leave to sit for 15 minutes.

  2. Meanwhile, cut the halloumi into slices, spray a frying pan with low calorie cooking spray and cook the cheese on each side until golden. Dice and set aside.

  3. Now make the salsa. Finely dice the onion and tomato and add to a bowl. Add the chilli, coriander, salt, and vinegar, and leave to one side for the flavours to develop.

  4. Uncover the cous cous. Fluff up and add the halloumi, mint and eggs. Mix well and form into 4 burgers.
  5. Spray the frying pan with low calorie cooking spray again and, on a low heat, fry on each side (around 7 minutes per side) until golden.

  6. Serve in a bun or flat bread (adding the calories/Points etc accordingly) with the salsa spooned over the burgers and a dollop of fat free Greek yoghurt.
