Greek Salad

Ingredients

  • ½ red onion peeled and sliced
  • 100 g cucumber cut into small chunks
  • 10 cherry tomatoes cut in half
  • 30 g reduced fat Greek-style cheese
  • 4 decent handfuls mixed salad leaves
  • 2 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • 2 tbsp pickling liquid from a jar of pickled vegetables
  • ½ tsp sea salt
  • freshly ground black pepper
  • 2 tbsp water

Instructions

  1. First make the dressing. Put the red wine vinegar, lemon juice, oregano, pickling liquid, water and salt and pepper into a bowl and mix. Set aside.

  2. Arrange the mixed leaves on a plate or in a bowl, then arrange the tomatoes, cucumber and red onions on top. Drizzle the salad with a couple of tablespoons of the dressing. Top with the diced cheese.

  3. Serve with the remaining dressing on the side.
