Chicken Souvlaki and Tzatziki

Ingredients

Souvlaki seasoning mix

  • 2 tbsp dried oregano
  • 2 tbsp paprika
  • 2 tsp dried thyme
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper

Souvlaki chicken

  • 2 tbsp Souvlaki seasoning mix
  • 4 large chicken breasts
  • 1 lemon juice of
  • skewers
  • low calorie cooking spray

Tzatziki

  • 160 g fat free natural yoghurt
  • 2 tsp lemon juice
  • 2 tsp garlic powder
  • 1 tsp mint sauce
  • sea salt
  • freshly ground black pepper

Instructions

Souvlaki seasoning mix

  1. Mix all of the ingredients together and place in a glass jar - preferably one with a tight lid.

Souvlaki chicken

  1. Cut the chicken breasts into chunks about the size and thickness of a chicken nugget. Place into a non-reactive bowl.

  2. Add the lemon juice and mix well so that all of the pieces are coated.

  3. Add 2 tbsp of the Souvlaki Seasoning Mix and mix well. Cover with clingfilm and place in the fridge for at least 1 hour.

  4. Preheat an oven to 200°C.

  5. Slide your chicken pieces onto the skewers and then spray them liberally with low calorie cooking spray.

  6. Heat a cast iron griddle pan (or mist a frying pan with low calorie cooking spray and heat, if you don't have one). When the pan is very hot, add the chicken skewers and cook on each side until the chicken colours.

  7. Once coloured on all sides, place the chicken in the oven for 5-10 minutes until the chicken is cooked through.

Tzatziki dressing

  1. Place all of the Tzatziki ingredients in a bowl and mix well. Season to taste.
