Chilli and Lime Baked Salmon

  • 2 salmon fillets
  • 1 red pepper deseeded and diced
  • 1 green pepper deseeded and diced
  • 1 red onion diced
  • 3 limes
  • 2 tbsp fresh parsley chopped
  • 3 cloves garlic crushed
  • 1/2 red chilli finely chopped
  • 1 tsp ground cumin
  • 2 tbsp water
  • 1/2 tbsp granulated sweetener
  • sea salt
  • freshly ground black pepper
  • low calorie cooking spray


  1. Preheat the oven to 190°C.

  2. Spray an oven tray with some low calorie cooking spray.

  3. Mix together the juice of 2 of the limes, garlic, chilli, cumin, parsley, water and sweetener and set aside.

  4. Place the salmon fillets on the baking tray, and drizzle with some of the marinade.

  5. Toss the diced peppers and onion in the remaining marinade, then arrange them around the salmon fillets. Wedge the remaining lime and add half to the tray.

  6. Season with some salt and pepper, then bake in the oven for 15 minutes. If you prefer the peppers a little more well done, remove the salmon from the tray and return the peppers and onion to the oven for a few more minutes.

  7. Sprinkle with a little more chopped parsley and serve with some fresh lime wedges and fresh seasonal vegetables.
