Bacon and Maple Blueberry Pancakes

  • 40 g Ready Brek
  • 50 ml milk
  • 1/2 tbsp granulated sweetener
  • 1 tsp vanilla extract
  • 3 tsp maple syrup
  • 4 bacon medallions
  • 75 g fresh blueberries
  • low calorie cooking spray
  • 2 eggs


  1. Cook the bacon medallions. You can grill, fry or cook in the oven depending on you preference. But make sure it's crispy.

  2. While the bacon is cooking mix the Ready Brek, milk, vanilla, eggs and sweetener together well.

  3. Spray a frying pan with some low calorie cooking spray and allow to heat.

  4. Pour in small amounts of the mix to make 2 pancakes. Allow to cook through until brown underneath, then turn and cook for a few more minutes.
  5. Repeat until all the mix is used (you should get 4 pancakes from the mix).

  6. Place one pancake on a plate, then arrange a piece of bacon slightly overlapping. Continue with the rest of the pancakes and bacon.

  7. Arrange the blueberries on top of the pancakes, drizzle with the maple syrup and serve.
