KFC Chizza

For the chicken

  • 2 large chicken breasts Butterflied
  • 1 large egg Beaten
  • low calorie cooking spray
  • 1 tbsp KFC spice mix (see below)
  • 30 g wholemeal bread

KFC spice mix

  • 1 tbsp salt
  • 1.5 tbsp black pepper
  • 1.5 tbsp dried onion flakes
  • 1/2 tbsp dried basil
  • 1/2 tbsp paprika
  • 1/2 tbsp dried oregano
  • 1/2 tbsp yellow mustard seeds
  • 1 tsp dried thyme
  • 1 tsp dried tarragon

For the pizza topping

  • 20 g reduced fat cheddar
  • 20 g tinned chopped tomatoes
  • 1 pinch salt
  • 1 pinch Italian herbs


To make the KFC spice mix

  1. Put all of the ingredients in a food processor and blitz until you reach a fine powder stage.

  2. Blitz the wholemeal bread slices in a food processor/blender until you have a fine crumb.

  3. Combine 1tbsp of the KFC spice mix with the breadcrumbs and set aside until we're ready to use them.

  4. You can store any leftover mix in an airtight container until you want to use it again.

To make the chicken

  1. Pre heat the oven to 180°C.

  2. Slice the chicken in half, and spread the halves apart like butterfly.

  3. Dip the chicken in beaten egg, then coat in the breadcrumbs/spice mix mix.

  4. Place on a baking tray that has been sprayed with low calorie cooking spray, then spray the top of each piece of chicken with some more Low calorie cooking spray.

  5. Cook for 15-20 minutes, turning once halfway through cooking.
  6. Top with the tomatoes and cheese and bake for a further 10 minutes until the cheese has melted and chicken cooked.

  7. Grind over some black pepper and serve!
