Lemongrass & Ginger Rice Noodle Soup

Ingredients

  • 1 bag stir fry veg
  • 100 g rice noodles
  • 750 ml vegetable stock
  • 1 chilli deseeded and chopped
  • 1/2 lime
  • 1 stalk lemongrass bashed with the back of a knife until it is roughly crushed
  • 1 tsp Lazy Garlic
  • 2 tsp Lazy Ginger
  • low calorie cooking spray

Instructions

  1. Fry the chilli, garlic, ginger and the lemongrass stalk for a minute or so in a little low calorie cooking spray.

  2. Add the veg and fry for a few more minutes.

  3. Pour in the stock and add the noodles. Stir and cook for 2 -3 minutes until the noodles are cooked.

  4. Transfer to serving bowls and squeeze over the juice of the lime.
