Creamy Tomato Vodka Pasta

  • 400 g fusilli pasta or the pasta of your choice
  • 1 tin chopped tomatoes
  • 20 cherry tomatoes cut in half
  • 4 cloves garlic finely chopped/crushed
  • 1/2 onion finely chopped
  • 1/2 yellow pepper finely diced
  • 4 spring onions finely chopped
  • 450 ml vegetable stock made up with 1 veg stock cube
  • 35 ml vodka
  • 3 tbsp tomato puree
  • 5 tbsp Arla Tomato and Basil Quark
  • low calorie cooking spray
  • sea salt
  • freshly ground black pepper
  • 1 handful fresh parsley chopped
  • 1/2 tsp Marmite or Worcestershire sauce


  1. Cook the pasta according to instructions on the pack. It will probably take 10-12 minutes.

  2. While the pasta is cooking, sauté the onions, peppers, spring onion and garlic in a little low calorie cooking spray until they have started to soften.

  3. Remove from the heat, add the tomato puree and vodka and stir well.

  4. Return to the heat and stir in the tin of chopped tomatoes, marmite and veg stock.

  5. Simmer for 5 minutes, add the tomato halves. Check the pasta and drain when cooked.

  6. Remove the sauce from the heat, stir in the quark and season to taste.

  7. Mix the pasta and sauce together, and serve sprinkled with some chopped fresh parsley.
