Prawn Cocktail

  • 170 g large cooked peeled prawns
  • 3 tbsp Arla Cherry Tomato & Basil Quark Cooking Cheese or add a little tomato puree and some dried basil to plain quark
  • ½ tbsp white wine vinegar
  • ½ tbsp tomato puree
  • ½ lemon cut into 3 wedges
  • 1 dash Worcestershire sauce
  • freshly ground black pepper to taste
  • 1 pinch paprika or cayenne Pepper
  • 1 pickled gherkin finely chopped
  • 4 leaves little gem lettuce or you could use Iceberg if you prefer
  • fresh parsley for garnish
  • 2 slices cucumber
  • 1 cherry tomato cut in half


  1. Mix all the ingredients (except the prawns, lettuce, lemon and parsley) together in a bowl. Squeeze in the juice from one of the lemon wedges. Check the seasoning and add a little more black pepper if needed
  2. Arrange the salad leaves on a plate or in a bowl
  3. Stir the prawns into the sauce, then arrange them neatly on each leaf. Spoon over the remaining sauce, then garnish with the cucumber, tomato and lemon wedges and serve
