Cut the filo pastry into 16 squares. In a mini muffin tin, spray 8 of the cups with low calorie cooking spray and push 8 of the filo squares in. Spray again with low calorie cooking spray and put the remaining 8 squares on top. Cook for 5 minutes.
Meanwhile, chop the plum and place in a saucepan with 1 tablespoon of the Sukrin Gold, the mixed spice and 2 tablespoons of water. Cook gently for 5 minutes until the plum has softened.
Beat the egg in a jug and add the remaining 1 tablespoon of granulated sweetener and the vanilla extract.
Into the filo cases, place some of the plums and top with the egg mixture. Bake in the oven for 12 minutes until the egg is set.
