Watermelon, Feta and Mint Bites

Ingredients

  • 12 cubes reduced fat Feta cheese approx 5g in weight
  • 24 cubes watermelon cut to a similar size as the Feta
  • 24 fresh mint leaves

Instructions

  1. Take a cocktail stick, thread on a cube of melon, then a mint leaf, then a feta cube, another mint leaf and finally another melon cube
  2. Repeat with the remaining ingredients to make up 12 skewers
  3. You can store these in the fridge for about an hour or so before serving
