Bacon, Spring Onion and Kale Hash

Ingredients

  • 5 medium to large potatoes washed, peeled and diced
  • 1 bunch spring onions finely chopped
  • 300 g kale washed and shredded
  • 6 bacon medallions diced
  • sea salt to taste
  • freshly ground black pepper to taste
  • 1 tbsp horseradish sauce optional
  • 1 sachet butter buds optional
  • low calorie cooking spray

Instructions

  1. Cook the potatoes in some boiling, salted water, until they are soft enough to mash.

  2. While the potatoes are cooking, spray a large frying pan with low calorie cooking spray.

  3. Cook the bacon and spring onions in the frying pan until they are cooked through.

  4. Put the kale on top of the onions and bacon, then cover with a lid.

  5. Cook on a medium heat for 5 minutes.

  6. Drain the potatoes and mash them roughly.

  7. Season with a little salt and pepper. If you're using horseradish and butter buds add them now and stir well.

  8. Mix the potato in with the bacon, spring onions and kale.

  9. Fry for 5 minutes, then serve with some extra veg!
