Pre heat the oven to 200°C.
Spray a frying pan with some low calorie cooking spray, turn up the heat and, when the cooking spray starts to bubble, add the chicken breasts to the pan.
Cook them for a few minutes until they start to colour then turn them over and cook for another couple of minutes.
Place them in an oven proof dish or tray then add the tomatoes.
Rip up the bail leaves and sprinkle them over the chicken.
Cut 3 slices off the lemon and cut each slice in half. Add these to the dish with the chicken.
