Remove the crusts from the bread, then roll each slice out so they are 2mm thick.
Using a 4cm star cutter, cut out 24 stars.
Place them on a baking tray, spray with a little low calorie cooking spray and cook in a hot oven (around 210°C) for 4 or 5 minutes. Turning once halfway.
Remove from the oven and allow to cool.
In the meantime, place the Danish blue cheese and quark in a food processor and blitz until smooth.
Place in a piping bag fitted with a small star shaped nozzle and pipe the blue cheese mix in a swirl on top of each piece of toasted bread.
Finally, top with quarter of a grape and serve.
