Heat the low calorie cooking spray in a large frying pan and fry the onions and garlic until soft.
Add the courgette and cook until they are softened, remove from heat.
Crack the eggs into a large bowl, season and mix well.
Add the fried vegetables, butter beans and tomatoes and stir.
Spray the pan with a bit more low calorie cooking spray and heat the pan.
Add the egg mixture and cook on a medium heat for 5 minutes or so, until the eggs have almost set and the bottom is browned.
Sprinkle the grated cheese evenly over the top and put under a pre heated grill for 3-5 minutes until set on top but still moist in the middle. Cut into 8 wedges and serve 2 per portion.
