Courgette and Butter Bean Frittata

Ingredients

  • 4 eggs
  • 1 onion diced
  • 2 cloves garlic chopped
  • 1 large courgette sliced
  • 1 can butter beans drained and rinsed - or you could use cannelini or borlotti beans
  • 1/2 tin chopped tomatoes drained well, or 3 fresh tomatoes, skinned and chopped
  • 2 spring onions
  • 40 g low fat cheddar grated
  • low calorie cooking spray
  • sea salt
  • freshly ground black pepper

Instructions

  1. Heat the low calorie cooking spray in a large frying pan and fry the onions and garlic until soft.

  2. Add the courgette and cook until they are softened, remove from heat.

  3. Crack the eggs into a large bowl, season and mix well.

  4. Add the fried vegetables, butter beans and tomatoes and stir.

  5. Spray the pan with a bit more low calorie cooking spray and heat the pan.

  6. Add the egg mixture and cook on a medium heat for 5 minutes or so, until the eggs have almost set and the bottom is browned.

  7. Sprinkle the grated cheese evenly over the top and put under a pre heated grill for 3-5 minutes until set on top but still moist in the middle. Cut into 8 wedges and serve 2 per portion.
