Pre-heat oven to 200°C. Peel potatoes and remove any eyes.
Dice the potatoes into pieces around 2in/5cm in length and rinse with cold water. Place in a pan filled with cold water and add plenty of salt.
Bring the pan up to the boil and let them cook until they start to soften but they are still firm.
Drain them in a colander and leave them there for 5 minutes. After the 5 minutes, put them in a bowl, season with plenty of salt and spray with plenty of low calorie cooking spray. Toss them, then spray them again as you're tossing them. They need to be very well coated!
