Garlic and Chilli Pasta

Ingredients

  • 200 g Rigatoni
  • 1 Red Chilli deseeded and chopped
  • 1 clove Garlic chopped
  • 1 Red Onion chopped
  • 45 g Reduced Fat Feta
  • 1 big handful Cherry Tomatoes
  • 1 small handful Basil
  • 8 Black Olives
  • Sea Salt
  • Freshly Ground Black Pepper

Instructions

  1. Cook the pasta according to the instructions on the pack
  2. Meanwhile, put the tomatoes in an oven tray, season and cook in the oven until they are roasted nicely

  3. Fry the onion with chilli and garlic until soft
  4. Add the cooked pasta and roasted tomatoes
  5. Stir in half the crumbled feta
  6. Serve sprinkled with the remaining feta, the olives and basil leaves
